Grilled fish is popular among Thai villagers living in the countryside.
Farmers would catch fish for their personal consumption or sell them as a side income during the off-farming season each year.
One villager in Phitsanulok said she buys the fish from farmers before grilling and selling them to villagers in nearby villages for Bt200 (US$6) per kilogramme.
It takes her two days to grill the fish to ensure that they can survive without refrigeration for up to one month.
Grilled fish can be consumed in various ways – either deep fried before eaten, mixed with spices and made into dips to be eaten with vegetables and fruits, or used in herbal spicy soups.
